Ingredients

45 ml Redbreast 12y Single malt Irish Whiskey
15 ml Metaxa 12 stars
10 ml Creme de Figue Briottet liquer
30 ml Reducted homemade tonic
15 ml Amarenna mixybar

PREPARAZIONE

Boil Tonic Water until it loses 2/3 of it's original quantity of water and the quinine flavour gets concentrated and you exploit the flavour , the sugar and the leftovers from a daily swift in the bar . You add all ingredients and serve with no ice . Garnish is also a food pairing : Dehydrated sour apple slice , Greek creme cheese , amarenna cherry and pepper .
